POLYUNSATURATED FATS AND WHAT THEY ARE

Polyunsaturated fats is all about structure and stability
Fatty acid chains are bonded together with 3 elements: carbon, oxygen, and hydrogen. When each carbon molecule is fully covered by all the hydrogens possible, this is called "Saturation" and this is a good thing.
When there is not enough saturation, this means that some hydrogen atoms have been removed and this causes and extra carbon bond to occur and be necessary.
Polyunsaturated fats have multiple unsaturated bonds, which means that more chemical changes happen, causing instability in the product or food.
Free radical damage can show up as
Fine lines and wrinkles

Inflammation inside and out
Digestive issues
Increased adipose tissue (body fat)
